Sweet Potato Wedges

This year was a wonderful Thanksgiving. With friends whom I’ve known for years and some I’ve made within the last one. The day began cooking over red wine at a friend’s house before heading to the main event. Within moments we had music playing, dancing happening, games going and the anticipation of a love filled meal at the tips of our fingers. We laughed, we waltzed, we played dreidel and drank whiskey. We ate copious amounts of food, sang karaoke, gave speeches and didn’t have any dessert. It was one of those holidays that will always bring a smile to my face.

Along with lots of veggies, I contributed Sweet Potato wedges. They were so lovely (and easy) that I made them again to wind down and ground me after the long weekend.

Ingredients 

  • 4 Sweet Potatoes (washed + cut lengthwise in fourths)
  • 2 Tablespoons of Ghee (melted)
  • 1 Teaspoon of Cinnamon
  • Dash of S & P

1. Pre-heat oven to 400 degrees. Place sweet potatoes single file on a baking dish.

2. Blend melted ghee and cinnamon together and gently pour over sweet potatoes.

3. Add a dash of Salt and Pepper.

4. Bake for 35 minutes. Flipping halfway through.

Allow to cool before serving and enjoy. Hope you all had a great Thanksgiving.
